Fall: the time when people start raving about “pumpkin.” It’s everywhere: Starbucks’ Pumpkin Spice Latte, pumpkin bread in the grocery store, pumpkin teas, pumpkin EVERYTHING! But most people don’t realize how easy it is to get the real stuff. Pumpkin has lots of health benefits, including antioxidants, fiber, vitamin A and yummyness! Instead of trying the fake “flavored” pumpkin things around this fall, buy a few cans of Libby’s and get creative.
You’ll find Libby’s in the baking aisle, near the other pie fillings. Make sure you get the 100% pure pumpkin!
Tonight I made a delicious snack that turned out to be sort of a spin on pumpkin pie! It was really yummy but also pretty healthy and simple to throw together. Here’s what I did:
Pumpkin Pie Yogurt Bowls
3/4 cup of plain yogurt
1/2 cup canned pumpkin (the real stuff–NOT pumpkin pie filling)
Sprinkling of pumpkin pie spice to taste
Drizzle of agave syrup–1 to 2 tsp.
Quaker Oatmeal Squares (I used brown sugar flavor)
In a bowl, mix the yogurt, pumpkin, spices and agave together. Top with oatmeal squares and enjoy!
This bowl tasted JUST like pumpkin pie (ok, maybe a little tangy with the yogurt but still great!) The Oatmeal Squares added a nice “crust” crunch and sweetened the deal. Enjoyed with a mug of Celestial Seasonings Honey Vanilla Chamomile and a nice serving of fitness homework. Parenthood tonight!
